125g black and gold cream cheese cut into chunks
75g unsalted butter chopped and kept cold
2 teaspoon salt
1 cup gluten free flour (Orgran )
2g Xanthan gum
Preheat oven to 210C
In food processor pulse the cream chees and cold butter. When combined add the flour and Xanthan gum.
Whiz to combine, scraping down the side of bowl.
Turn out onto surface which has 1/4 cup gluten free flour and bring together with your hands.
Chill pastry (will roll better), then using a rolling pin roll the pastry to 1/2 cm thick
between two pieces of baking paper greased on both sides.
Add filling and cook in oven for 20 minutes.
